Glazed Carrots

Peel Carrots and cut into serving size pieces

Cook carrots in boiling, salted water until just tender; drain.

While carrots are cooking, whip butter and honey together until light and fluffy.

Add orange rind, nutmeg, and vanilla.

Spoon glaze over carrots and toss well.

Pour into serving dish and serve.
Note
Glaze can be prepared ahead and refrigerated until ready to use.
